Recipes from Kanta Ba (Gujrati Grand Mum)

SATTU
|
Ingredients:

- 1/4 kg wheat
- 1/4 kg dalia ( Gram)
- a little cardamom
- nutmeg
|
Purpose:
Very good for overall strength. It is also very tasty.
Age Group:
Under 10 years.

|
Method:

- Wash the wheat with plenty of water.
- Spread it out to dry on a piece of cloth, preferably in a little sunlight.
- Roast dalia on a slow fire. Mix the dalia and wheat.
- Add a little cardamom and nutmeg for seasoning.
- Grind to powder.
- For Below 3 year - olds.
- Make a porridge.
- Add 1 tbsp of the above mixture to 1/2 cup of milk.
- Cook and stir overa slow fire.
- Add some jaggery for sweetening.
- Start by giving the child a few tbsps and over a few days, increase to a cup.
- For above 3 - year-olds.
- Add 1 tbsp of the above powder to 1/4 cup of hot milk.
- Add jaggery to taste.
- add 1/4 cup hot milk.
- Again it is advisable to start with a little and increase slowly to one or one and a half cups.

BAJRA PORRIDGE ( For feeding mothers)
|
Ingredients:

- 1/2 kg bajra
- 1/4 kg mung dal
- A handful of rice
|
Purpose:
Taken regularly, it increases the flow of milk for lactating mothers.
Age Group:
Upto 3 years and 3 to 10 years.

Method:

- Roast all ingredients over slow fire.
- Coolit and then grind until grainy. ( Not very fine).
- Take one cup of the mixture. Add 4 cups watr, salt to taste and turmeric powder and 1/2 tsp ajwain.
- Mix this in cold water.
- When the mixture is even, put it on a slow fire, stirring continuously to avoid it becoming lumpy.
- Let it cook until it begins to bubble. Serve with a hot cup of milk.

NACHIN ROTIS
|
Ingredients:

- Nachni flour ( Ask for by name at any provision store)
|
Age Group:
3 to 10 years.

Method:

- Make a dough and make into rotis.

NACHNI PORRIDGE
|
Ingredients:

- 1 tbsp nachni
- 1/2 cup milk, jaggery
|
Purpose:
High in calcium.
Age Group:
Under 3 years.

Method:

- Add the nachni to cold milk and cook on slow fire.
- It is important that the fire be slow so that the nachni cooks for enough time.
- Add milk until it is the desired consistency.

HALDI DOODH
|
Ingredients:

- 1/2 cup milk, termeric powder
- 1/4 " finely cut ginger
- a pinch of salt
- 1/4 tsp ghee
- gur to taste
|
Purpose:
Taken 2 -3 times a day it is a definite cure for a cough.
Age Group:
Any age.

Method:

- Boil the milk.
- Add termeric and ginger.
- Once it begins to boil, add the salt, jaggery and ghee.

GODPAPDI
|
Ingredients:

- 1 cup whole wheat flour
- 3 tbsp ghee
- 2 tbsp finelly cut jaggery
|
Purpose:
A very healthy dessert, especially in winter.
Age Group:
Any age.

Method:

- Roast the flour on a slow fire until it begins to look pinkish.
- Add the jaggery. Mix it. Take off the fire for a bit and spread it out on a tray or thali.
- While it is still hot, run a knife through it shaping into pieces in squares.
- Don't take out the pieces yet. Once it is cool, remove the pieces from the tray.

BOIL REMOVER
|
Ingredients:

- Wheat flour
- a pinch of termeric powder
- 1 tsp oil
|
Purpose:
To remove a thorn or make a boil burst.
Age Group:
Any age.

Method:

- Mix wheat flour with a little water and heat.
- Add the termeric and oil. Apply the skin while the mixture is slightly warm.
- When it is dry, rmove it. The boil/ thorn comes out with it.

NOSE BLEEDING
|
Ingredients:

- Wheat flour
- 1 tsp sugar
- 1 cup milk
|
Age Group:
It stops nose bleeding caused by heat.
Age Group:
Under 10 years.

Method:

- Mix the above ingredints and drink.

KADDHA
|
Ingredients:

- 4 peppercorns
- 3 cloves
- 1/2 " stick cinnamon
- 5 tulsi ( Basil leaves)
- 1/4 ' ginger crushed
- 1 tbsp honey
|
Purpose:
Taken several times a day, it cures a cough amazingly fast even in adults.
Age Group:
Any age.

Method:

- Mix all the above ingrdients except for honey.
- Add 1.5 cups water.
- Put to boil.
- Let it boil until only approx. one cup of water is left.
- Take off the fire.
- Add honey.
- Give it to the child while it is still warm.
